The keto diet is a low carb, high fat, whole foods diet that turns your body into a fat-burning machine.

This diet promotes eatinglots of fat, in order to put your body in ketosis, which is a fat burning state.
To do this, you need to consume roughly 60-80 percent of your calories from fat. Therest of your calories will come from protein (10-15 percent) and carbohydrates (less than 10 percent).
This diet is similar to the paleo and Atkins diets in that it promotes a low carb, whole foods diet, but keto goes a step furtherby exactly balancing macronutrients (fat, protein, and carbohydrates) for optimal weight loss.

While offal isn’t widely consumed in the U.S., it is more common in fine cuisine (think pâté, sweetbreads, foie gras) and many other countries.
Growing up in rural Pennsylvania, I ate scrapple and liverwurst on my pancakes, though not often. My mom and gram enjoyed liver and onions, and my gram also liked pigs feet.
They were apparently onto something because offal, especially organ meats, has more nutrient density than just about any other food on the planet!
It’s rich in B vitamins, iron, zinc, magnesium, selenium, choline, and fat-soluble vitamins (A, D, E, and K).
Evolutionary biologist often credit these “nose-to-tail” animal foods with making the human brain grow much larger and more complex in only a few thousand generations.
Pickled beef tongue tastes like a cross between smoked ham and corned beef, but if you just can’t bring yourself to try it – or you know your family won’t eat it – feel free to substitute smoked ham.
