This Jalapeno Popper Potato Salad recipe is a delicious twist on traditionalpotato salad recipes. It combines the flavors of jalapeno poppers(cream cheese, jalapenos, bacon, and cheese) with a potato salad. Warm or chilled, this Jalapeno Popper Potato Salad is the perfect side dish for your next barbecue or potluck!

Do you know how to make Jalapeno Poppers? It is quite simple. You just slice open jalapeno peppers, scoop out the seeds, fill the hollowed-out peppers with cream cheese, and then broil the peppers for 6 – 8 minutes. Making jalapeno poppers is easy, but if you want to make enough for a crowd it can be quite time-consuming. That’s why I like using jalapeno peppers and cream cheese in other dishes to add that delicious combination of flavors to a dish that will serve a crowd without a lot of work.

My Jalapeno Popper Casserole Recipe is a huge hit with my family. Since my Jalapeno Popper Casserole has tater tots, I already knew the flavors of my Jalapeno Popper Dip recipe work well with potatoes. which inspired me to use jalapeno peppers, cream cheese, and bacon, to create a Jalapeno Popper Potato Salad Recipe.

I think the best potato salad recipes are the ones that are a unique take on traditional potato salad. I started by adding bacon and cheese because everybody loves a Loaded Baked Potato Salad recipe. Then to take it to the next level, I made a substitute for potato salad dressing usingmayonnaise, cream cheese, green onions, and diced jalapenos. The result is a melt-in-your-mouth, come-back-for-seconds Jalapeno Popper Potato Salad recipe that is delicious when served warm and even better when served chilled!

Make-AheadJalapeno Popper Potato Salad

This easy potato salad can be made simpler by leaving the skin on the potatoes. Just wash thepotatoesand cut them up.

Prep-Ahead Tip: You can cut the potatoes the night before. Then place them in a bowl, cover them with water, and place them in the refrigerator. You can also dice your peppers and slice your green onions the day before and store them in a sealed container in the refrigerator. You can also cook your bacon ahead of time, crumble it, and store it in a sealed container.

Make-Ahead Tip: To serve this potato salad chilled, it needs to be refrigerated for at least 2 hours. However, you can make the potato salad the day before and let it chill overnight.

Jalapeno Popper Potato Salad Recipe

Serves: 8

Cooking Time: 15 minutes
Total Time: 2 hours and 30 minutes

Ingredients:

  • 6 – 8, potatoes, scrubbed and cut into bite-size pieces
  • 8 slices cooked bacon (How to cook bacon in the oven)
  • 3 jalapeno peppers, diced and deseeded
  • 3 green onions, thinly sliced
  • 1 cup cream cheese
  • 1/2 cup shredded Monterrey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise

Directions:

  1. Place the potato pieces in a large pot, cover with water and cook over a medium-high flame until it reaches a boil. Turn flame down and simmer for 15 minutes or until the potatoes are fork-tender. Once the potatoes are done cooking, place them in a colander and rinse them under cold water. Let drain.

2. While the potatoes are cooking, cook your bacon according to the package directions. Remove cooked bacon from the pan and crumble it into small pieces.

3. In a large bowl, combine cream cheese, mayonnaise, shredded cheeses, the diced jalapeno peppers, onions, and crumbled bacon. Stir to thoroughly combine.

4. Add the cooked potatoes to the jalapeno popper mixture. Toss well to coat the potatoes.

5. Cover the bowl and place it in the refrigerator. Chill for at least 2 hours.

    Thank you for the yummy recipe! I ended up roasting my jalapeños over my gas stove burner to char them, then removed the skin and seeds before chopping them up. You get a much more intense jalapeño flavor that way. I also replaced the mayo with light sour cream. This potato salad had a little bit of a spicy kick but not too much. My dad and husband kept remarking how delicious this potato salad was when we were eating it yesterday. And it just so happened that my mom made jalapeño popper mac n cheese, so we had 2 yummy sides! Thank you for a great recipe!

    Tried it substituting smoked salmon for the bacon. Also dropped the mayo and substituted 1/4 cup each of sour cream and Greek yogurt. Wow was the response from my friends that don’t eat meat. Everyone loved it. The recipe with bacon was great also.

    I made this today. I used jalapeños I froze last year. It’s very good! But it could use salt and pepper and maybe a little cayenne pepper. But that’s just my opinion.

      Hello. I’m back. After eating the potato salad cooled, I thought I would add on here that though the fresh peppers were good, next time I will oven roast my jalapenos before adding them to the salad to add a little bit more flavor and less of the crunch.
